Nothing fancy.'


Banana oatmeal cookie


3 ripe bananas

340gms of oatmeal.

68 gms of chocolate drops


Can also add Walnuts or Pecan to replace chocolate drops if it’s unavailable.


• Preheat the oven 180C

• mash the banana and mix the oatmeal and chocolate drops.

• mould the cookie batter into round shape and put them into a non stick baking pan.

• Bake for 15mins


Makes 12 pcs of cookies.

Stuffed kale inspired by our culture of stuffing all veggies


Ingredients:

2 bundles of flat kales

1 cup of rice soaked in water for a couple of hours

2 medium size tomatoes finely chopped

2 stalks of celery finely chopped

4 cloves of garlic finely chopped

Olive oil

Juice of half a lemon

1 tablespoon of tomato paste

Salt


Method:

-remove the stalks of the kale and cut into roughly hand palm size (do not discard the stalks we’ll use it later) boil for a couple of minutes and let cool

-drain the water from the rice

-add veggies to the rice and season with salt and a generous drizzle of olive oil

-stuff the kale with rice mixture

-place the kale stalks in the pot then place the stuffed kales

-add a cup of water with the tomato paste and lemon and another drizzle of olive oil

-cook on medium heat for around one hour and enjoy 😋


You may add chilies for a bit of heat, you may replace celery with parsley
