A lovely healthy and refreshing drink from this part of the world is mint lemonade. Lemons a

re full of the lovely anti oxidant vitamin C, which as we know helps to ward off colds and flu, particularly beneficial at this time of year! But did you know that mint also contains vitamin C?!

Mint contains a wealth of vitamins and minerals including magnesium and calcium for bone health and is also a rich source of iron and of course vitamin C!

This drink is readily available in juice bars and coffee shops over here in Abu Dhabi, but I thought it would be nice to make my own, so here is my recipe.

Makes enough for 1 litre

  • 2 oranges

  • 3 lemon

  • 3 tespoons of coconut sugar

  • 1 handful of FRESH mint leaves

  • 750ml of water

Squeeze the oranges and lemons and add to a liquidiser followed by the sugar, mint and water.. and simply blast for a couple of seconds!

You can substitute still water for sparkling (or even hot water) and if you dont have a blender, simply chop the mint as finely as you can.

Add ice cubes and serve!

It's really delicious and nutritious!
