
During lockdown, its important to eat well, in order to build on our immunity and with limited stocks in the larder, this isn't always easy. That's why I decided to make a cake with the ingredients I had left! It kind of turned into a throw everything in and hope for the best kind of affair and I'm glad I did, because it really is yummy and dare I say, pretty healthy, as far as cakes go!
So here it is- throw everything in and hope for the best, Banana and date cake.
All weights are approximate
INGREDIENTS
200g self raising flour
150g of soft butter or unflavoured coconut oil
2 eggs
2 bananas
Half cup of finely chopped date
Half cup of roughly chopped sultanas
2 level tablespoons of chia seeds
Teaspoon of organic cocoa
100-120g of coconut or good brown sugar
1 grated carrot
Teaspoon of mixed spice
Tablespoon of marmalade
METHOD
Mash bananas, beat eggs and add to the rest of the ingredients. pour into large loaf tin and allow to sit for around 30 mins.
Turn oven to 140F and bake for 1hr 15mins
It comes out quite soft, so be careful.
The ingredients can be altered slightly to suit yourself, for example add pumpkin seeds in place of chia seeds and you'll still get your omega 3 intake. Use jam, or a tablespoon of honey or maple syrup in place of marmalade.
